Lemon Crinkle Cookies

These lemon crinkle cookies are one of my favourite things to bake. I have made them many times and I find them very delicious. When they are fresh they are very soft and gooey (in a good way) they are the best coming fresh from the oven. These cookies are not very hard to make, I think the hardest part for me is zesting the lemons, but it is well worth the effort. Here are some pics of a batch that turned out very well:


Here is the recipe I use for these delicious cookies:
1/2 cups butter 1/4 tsp salt
1 cup sugar 1/4 tsp baking powder
2 tsp vanilla 1/8 tsp baking soda
1 whole egg 1 1/2 cup flour
1 tsp lemon zest 1/2 cup powdered sugar
1 tbsp fresh lemon juice
Preheat oven to 350°C grease light coloured baking sheets with non-stick cooking spray and set aside.
In large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet
Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte. Cool cookies for 3 minutes before transferring to cooling rack.
(if using a nonstick darker baking sheet, reduce baking time by about 2 minutes)
